Irish Wheaten Bread Mix

This bread mix is easy to make and quick to bake, giving fantastic results for even the novice baker. Only two additional ingredients needed – MILK and one EGG. I prefer buttermilk but any milk or any plant-based alternatives such as rice milk will work equally well and one egg. The EGG can be substituted by a teaspoon of vegetable oil. This makes a one 1lb loaf. The only equipment required is a 1lb loaf tin for the oven.

Irish Stout Bread Mix

This bread mix is easy to make and quick to bake, giving fantastic results for even the novice baker. This recipe requires 4 additional ingredients, but it is well worth the effort – MILK, BUTTER, Treacle and of course Stout. Any stout will work, and I mainly use Guinness. Given my passion for using local ingredients, I also use a local craft stout called Yannaroddy from Kinnegar also made in Donegal. If you don’t want to use milk, any plant-based alternatives such as rice milk will work equally well and you can replace the butter with the same amount of vegetable oil.

This makes one 2lb loaf. The only equipment required is a 2lb loaf tin for the oven. Alternatively, you can divide the mixture into two and make 2 x 1lb loaves (and if you wish, you can freeze one for later).

Irish Scone Mix

This scone mix is easy to make and quick to bake, giving fantastic results for even the novice baker. Only three additional ingredients needed – BUTTER, MILK and EGG. I prefer buttermilk but milk or any plant-based alternatives such as rice milk will work equally well and you can replace the egg with a teaspoon of good quality vegetable oil.

The mix makes approximately 6-8 scones and the only equipment required is a baking tray and a cookie cutter to cut out the scones. I like to add cherries or chopped up mars bars and pecans for a change.
